Black River is the first and only sturgeon breeding farm and producer of the legitimate Malossol Oscietra caviar in the Southern Hemisphere. Black River produces product of the highest quality, made possible by the natural environment, the strict technical and sanitary controls under which sturgeons are bred, the use of a perfected and characteristic "recipe" to make caviar, and the traceability of the fish from the moment they are born until the caviar is served at the consumer's table.
Black River Osetra is made from acipenser gueldenstaedtii sturgeon roe, of Russian origin. With a 3.2 mm diameter, their color ranges from light brown to gold. Their texture is firm with a unique glazed shine, and their intense creamy taste with a touch of nuts nicely remains in the whole palate.
