Chef Vitaly Paley's Passover Gefilte Fish, Soviet Style

Last Passover, Chef Vitaly Paley of Portland, Oregon's Imperial Restaurant, was featured in Bon Appétit with his family recipe for soviet style gefilte fish. At the time, we printed out copies of the article to share with our customers.

Several of you have requested copies again, so for your convenience we are posting it here.

Did you make Chef Paley's gefilte fish last Passover? Tell us about it in the comments!

White Fish for Passover and Kanaloa's Easter Brunch Menu

White Fish for Passover

Thinking outside the box for the Holiday

Have you been thinking about how to localize your Passover Seder? Kanaloa has been thinking too!

This Passover, Kanaloa Seafood will offer our Local California Fluke, for creative home chefs who would like a sustainably sourced, local alternative to Whitefish. Since the Midwest is still thawing from the severe winter storms, Kanaloa's Great Lakes Whitefish will not be available in time for Passover. However, Kanaloa's Fluke is a mild white fish with a similar flavor profile to our Local Halibut and are caught at 2-5 lbs in size. Preorder Kanaloa Fluke, fillets for $21.95/lb and our rich Fish Stock $9.95/Qt or make your own stock with Fluke heads and bones $3.00/lb. Call your favorite Fish Monger to preorder or stop in today!

Throw a Game of Thrones Party with Kanaloa Seafood

The food was plain, but very good; there were loaves of crusty bread still warm from the ovens, crocks of fresh-churned butter, honey from the septry’s hives, and a thick stew of crabs, mussels, and at least three different kinds of fish.  Septon Meribald and Ser Hyle drank the mead the brothers made, and pronounced it excellent, whilst she and Podrick contented themselves with more sweet cider.

Santa Barbara's First Sustainable Seafood Market featured in Huffington Post

Santa Barbara's best kept secret was featured in the Huffington Post Food Blog today. Farm to Fork Across America blogger, Julie Ann Fineman spent a day with Kanaloa Seafood and wrote about Santa Barbara's only (and America's first) ISO 14001 certified seafood company and our environmentally responsible practices:

Don and Randee enjoy setting the bar high. As part of their business family, fishers must be willing to go the extra mile to improve their practices. If necessary, some modify their fleet, including more selective nets and more fuel-efficient engines. They must also support:

• Avoiding damage to shallow ocean floors from dragging heavy equipment
• Rotating the harvest of species to not over fish one population
• Employing new practices to lesson environmental impact

For Kanaloa, processing is part of sustainability. Sanitation and food safety are critical.
